Beef is also a treat when boiled. To keep the meat tender, only allow the broth to simmer gently.

    prime boiled beef
  • 1
    onion
  • 1
    celeriac bulb
  • 2
    carrots
  • leek
  • butter
  • salt
  • For the herb sauce:
  • 50 g
    fresh parsley
  • various herbs to taste
  • 3
    pickled gherkins
  • 2
    free-range eggs, hard-boiled
  • olive oil
  • fruit vinegar
  • salt
  • 1
    clove of garlic
  • fruit vinegar

    Instructions - Beef with herb sauce

      Step
      Briefly fry the onion in the butter, this gives a nice toasted flavour to the meat broth.

      Then add water and bring it to the boil. Salt the boiling water, then add the meat and vegetables. The meat should be completely submerged in the water.

      Simmer on a low heat for about 1-2 hours.

      Thinly slice the beef and serve with boiled potatoes, root vegetables and the green herb sauce.

      Finely chop the parsley, herbs, eggs, garlic and gherkins.
